Sweet Potato Peanut Butter Cups


This is a healthier version of my all-time favorite chocolate is so good, I have to fight my own kids for the last piece!

  • 1/2 cup semisweet chocolate chunks
  • 1/2 bar of Ghirardelli 86% dark chocolate
  • 1 1/2 cups of peanut butter powder
  • 1 tsp of vanilla

The sweet potatoes are the star of this dish, bringing in their natural sweetness and distinct flavor. The semisweet and dark chocolates add a rich depth to the taste while the peanut butter taste and vanilla provide a nutty and aromatic essence. The peanut butter powder adds all the flavor and half the calories!

How to Make It

Now let's get down to the exciting part - making these sweet potato peanut butter cups! The process is really simple and straightforward:

  1. Pierce and wrap the sweet potatoes in a paper towel and microwave them for 8-10 minutes.
  2. Mash the cooled sweet potatoes. Mix in the vanilla & peanut butter powder. If the mixture is sticking to your hands, add more powder one tablespoon at a time.
  3. Microwave the chocolates 30 seconds at a time and stir. Repeat this until the chocolate has completely melted.
  4. Pour 2 teaspoons of the cooled, melted chocolate into a mold. Wait for 5 minutes. Add the sweet potato and peanut butter mix on top, then pour more chocolate over the tops.

*I used a mini cupcake nonstick mold and was able to make 20 cups.
